First, respondents were asked to mention all the foods and beverages consumed in the preceding 24 hours. Then they were asked to describe the foods and beverages consumed, including ingredients and cooking methods of mixed dishes. The amounts of all foods, beverages, ingredients of mixed dishes consumed were estimated either in weight, household units (volume determined by water content), or in monetary value. \n\nThe proportion eaten by the respondent was determined based on the volume eaten and the total volume of the dish. This proportion was used to calculate the amount of ingredients consumed in their raw forms. For dishes consumed outside the home, standard recipes were used, and the amount of ingredients consumed by the respondent determined. The Kenyan Food Composition table (2018) was used to convert the foods consumed into nutrients intake. \n\nEnumerators were graduates with at least a bachelor's degree in nutrition with some experience in food consumption studies.
